Easter Layer Cake

I always say on here that I don't cook but the truth is that I love to bake. I don't really bake from scratch and I really like to get a recipe and just change it up.

I originally saw the idea of a rainbow cake here (p.s. one of the cakes on this link...well, the colors are not in color order and that irks me just a tad. I'm an art teacher, sorry!)

Well, I didn't want to double my cake recipe and I didn't want to buy more cake pans so mine is only 3 layers. Also, I did mine for Easter so I did pastel colors.

I kind of just made this up...
Cake Recipe:
1 White box cake
Add to cake mix:
1 c. sour cream
1 c. vanilla yogurt
replace water for coconut concentrate (found in the ethnic food aisle)

Bake at 350 for 25 minutes

Icing:
.5 bag of confectionery sugar
8 oz. cream cheese
1/4 c. milk
1/3 c. vanilla yogurt
Add coconut shavings as you like!

I HOPE you save me some! Looks delicious! Also, I think it's hilarious that you said "box cake". Erik says "box cake" all the time and I make fun of him for it!
